How can you see a diff of what files were modified during a puppet run?

Use the --show_diff option

puppet apply --show_diff

You can use the Puppet reports in combination with the filebucket contents on the Master. The Puppet dashboard makes this really easy, but if you don't want to install it, R.I. released some tools for looking at the reports via the CLI.
